Pickles
Picked Red Onions
ingredients:
- red onions, chopped
- white vinegar
- apple cider vinegar
- salt
- sugar
- black peppercorns
Pickled Carrots
ingredients:
- 1kg carrots
- 10g salt
- 4 tbspoon neutral oil
- some garlic, ginger, mustard seeds, coriander seeds, tumeric, whatever you want
process:
- Cook the oil to ~40C
- add in the flavorings
- grate or peel the carrot to thin slices
- coat 'em in the oil
- pack tight
- let it ferment ~7 days
=### Kimchi = 1 napa cabbage 1/4 cup of salt
process:
- cut the napa cabbage into quarters
- rinse
- generously salt all the leaves
- massage every 20-30 minutes for 2 hours
- add all the spices to the mix
- give it a good toss
- add any other things you want to put in
- use pickling caps
- let it ferment ~5 days
spice mix:
- 1 cup water
- 1 cup gochugaru
- garlic
- ginger
- w/e you want
- heat water and turn spice mix into paste
make sure everything is submerged under the brine made by the cabbages
=### Kombucha = 300g Sugar 30g organic tea High quality water
process:
- Bring 1ltr water to boil adding sugar as you go (don't let the sugar burn)
- Once all sugar added, bring temperature down to medium, add tea and steep for 20 minutes
- Let the sweet tea cool
- Add to the big jar
- Top big jar with water
- Send a blessing
- Check in 7 - 10 days
